After dropping my kids off to school this morning, I was hungry as a racehorse! I have to admit, my cereal and soy milk didn’t cut it! This is a blessing and a curse of working out, you get hungry more, but you can eat more (of the right things, of course). So in search of something good and good for me I traveled to my neighborhood farmer’s market. I decided to go for a Mexican-inspired brunch because of how easy it is to eliminate meat from the recipes. I picked up red and green bell peppers, mushrooms, cilantro, tomatoes, garlic and avocados for guacamole. So here’s my yummy resume:

1.Add a tablespoon or two of safflower oil to a non-stick pan (safflower oil is excellent for high-heat cooking, why olive oil you may ask. Well, olive oil becomes toxic once heated to a certain temperature. To be safe, leave that for salads, homemade dressing, and your monthly hot oil treatment!)

2.Cut red and green bell peppers, mushrooms, cilantro, tomatoes, and garlic into thin slices.

3. Add seasonings like onion powder, cayenne pepper, or Braggs Amino Acid for protein and a soy sauce flavor.

4. Add a few splashes of water as you see fit while cooking.

The whole process should take 5-10 minutes.

Now for my favorite part. GUACAMOLE!

1. Use a large spoon to peel and carve the avocado out. Keep the pit! It helps the guac stay fresh longer (in the rare event that you have leftovers).
2. Add red pepper seasoning, cayenne pepper, lemon, onion, tomato, and finally sweet sweet cilantro. Pull the leaves from the stem and cut the leaves into smaller pieces. Get creative and add or eliminate any of the above to your taste.

3. Use your spoon to mash the up the avocado and mix the ingredients.

4. Add to a fajita with your stir-fried veggies or enjoy with multi-grain tortillas!

5. ENJOY!

Did I mention that this meal is not only vegetarian but vegan!

Now to the cash saving part. More money for clothes, shoes, make-up, etc :). My trip to the market costs me $22! In addition to the red and green bell peppers, mushrooms, cilantro, tomatoes, garlic, and avocados I scored red grapes, multi-grain pita bread, and falafel mix (great for a Turkish inspired lunch with hummus, olives, and feta cheese (optional)).
